For the salmon-avocado snacks

  • 3 ripe avocados
  • 5.7 oz salmon chunks
  • 3/4 cup soy beans (cooked)
  • ½ red onion, chopped
  • Lemon juice
  • Optional: salt and pepper

For the couscous with green herbs

  • 7 oz couscous
  • 1 – 2 scallions
  • 3/4 cup fresh herbs of your choice (mint, dill, parsley)
  • Lemon juice
  • Salt and pepper
